Homemade Bread Recipe
(4 loaves)
10 1/2 cups white bread flour (do not use all-purpose flour)
1/2 cup sugar
2 rounded tbls. saf-instant yeast
3 tbls. liquid lecithin (Squeeze or pour approximately 3 tbls. of lecithin directly into the bowl. Do
not measure with measureing spoon, it is VERY hard to clean. You can
make an indentation in the flour with you measuring spoon to help you
pour the right amount.)
4 cups hot tap water
1 tbls. salt
Mix dry ingredients. Add lecithin and water. Mix for 1 minute and check consistency. If dough is too dry, add more water. If dough is too moist, add more flour. Mix for 5 minutes (or knead by hand for 10 minutes). (Do not add water or flour to the dough after it has finished mixing.) Spray counter and pans with Pam. Shape loaves and cover with a dish towel. Let raise 25 minutes. Bake at 350 degrees for 25 minutes. This recipe makes 4 loaves of bread. (A Bosch mixer or 6 quart KitchenAid mixer can handle the full recipe. If using a 5 quart KitchenAid mixer, cut the recipe in half.)
For whole wheat bread, use the same recipe but
add one cup of applesauce as part of the hot tap
water. Mix for 8-10 minutes. You can replace up
t0 2 cups of flour with any other grains or
cereals.
It is important that you remove bread from pans soon after it is taken out of the oven and placed on a cooling rack to cool (can get soggy if left in the pan).

Regular size loaves, Small loaves, Round Italian Loaves, French Bread, Baguettes, Braided Loaves, Breadsticks, Pizza, Calzones, Dinner Rolls, Hamburger Buns, Hogie Buns, Soup bowls, Scones (Navajo Tacos), Focaccia Bread, Cinnamon Rolls. etc.
Everything is baked at 350 degrees except pizza which should be baked at 400-450 degrees.
Everything should raise for 25 minutes, except for pizza which does not need to raise at all.
